Note: For the sauce, make the following substitutions:
- Coconut aminos instead of soy sauce
- Fish sauce instead of oyster sauce
- Honey instead of brown sugar
- Tapioca Starch (or arrowroot powder) instead of cornstarch
Cauliflower Fried Rice (minus the beef)
Also, I’ll make an Instant Pot Whole Chicken and Broth to have for lunches throughout the week (recipe coming soon)
TUESDAY: Freezer meatballs + Teriyaki Sauce, leftover cauliflower rice + roasted veggies
Freezer meatballs are from this book with Teriyaki Sauce
While you bake the meatballs, prepare the sauce and reheat the veggies
WEDNESDAY: Homemade Chipotle Bowls
- Sheet-pan Chicken Fajitas
- Cilantro Lime Rice
- Black Beans
- Shredded Monterey Jack Cheese
- Individual Guacamole Packets (from Costco)
THURSDAY: Coconut Crusted Cod + Green Beans + Salad with leftover veggies
Recipe coming soon, but here are the ingredients:
- Frozen cod filets
- Primal Kitchen mayo
- Unsweetened coconut flakes
- Homemade Italian Seasoning
FRIDAY: PIZZA NIGHT!
SATURDAY + SUNDAY:
Paleo Waffles (Make large batch and freeze)
Is the coconut crusted cod recipe available anywhere?
I don’t have the Coconut Crusted Cod recipe posted, but I believe it was just Cod filets, patted dry, dipped in Avocado-Oil Mayo (I use Primal Kitchen) then in a mixture of unsweetened Coconut flakes, sea salt and Italian seasoning 🙂
